Chicken casserole is a great dish, but perhaps you’re ready for a change. Here is a recipe to spice up your canned chicken and make great (and easy) chicken tacos!
The first step is to drain 2 cans of canned chicken. Set the chicken aside and prepare a medium skillet on the stove. Dice up half an onion and 1 bell pepper and sauté them in the skillet. When they are softened, add the diced chicken. Mix these three ingredients together along with a half a teaspoon of chili powder, cumin and a pinch of cilantro. Let this mixture cook for 2-3 more minutes.
Then, remove it from the heat. In the microwave, warm up the tortilla shells according to the instructions on the package. In the tortilla add the chicken and vegetable mixture, topped with shredded cheese. If you’d prefer instead of cheese or in addition to it, you can also add salsa or guacamole. Fold the tortila in half, or like a burrito and enjoy!
If you don’t use all of the chicken mixture, it can be refrigerated and reheated at a later date. This recipe only takes between 10 and 15 minutes to make and feeds two people.
